Milk – 1 liter
Saffron threads – 8 to 10
Cardamom Powder – 1 teaspoon
Sugar – 350 grams
Chopped almonds – 1 teaspoon
Chopped pistachios – 1 teaspoon
Maize flour – 1 teaspoon
Juice of 1 lemon

How to Make Rasmalai

Step 1 – To make Rasmalai, first thing is to make chhena, for this, put milk in a pot and heat it till the milk comes to a boil. Once the milk boils, turn the flame to medium and add lemon juice. Now cook it while stirring with a spoon until the chenna is completely ready.

Step 2 – Turn off the gas and put the chenna in a cotton cloth and wash it with water to remove the sourness of the lemon. Now squeeze all the water out of the chhena, and leave the chhena in the cloth to set for half an hour.

Step 3 – Now knead the softened dough by kneading the chhena with your hands, so that the dough can be formed properly.

Step 4 – Now break 8-10 balls and make a peda in a round shape on the palms. Now press it with the palm and prepare it in a flat shape.

Step 5 – Now in a pan, add a bowl of water and half a bowl of sugar and boil till the sugar dissolves.


Step 6 – Now put the dough in it and cover the pan and cook it for four to five minutes (not to cook too much or else it will become hard). After cooking, take out the dough from sugar syrup.

Step 7 – Add milk to a pan and boil the milk on medium flame till it reduces to half. When the milk is halved, then add sugar and cook till it dissolves. Now add cardamom powder, saffron, maize flour and cook with a spoon until it thickens, taking care that milk does not burn from the edges.

Step 8 – Now turn off the gas and add rasgulla (loee) to it and garnish with almond-pistachio and keep it in the fridge for one to two hours. Ready to eat rasmalai recipe, serve it to your family or feed it to the guests who come home.
