In this, you can use vegetables of your choice like broccoli, paneer, capsicum, baby corn, etc. Friends, it is very easy to make this. So let’s know.


Ingredients:-

Green Thai curry Paste:

Coriander Seeds – 1 tsp
Cumin Seeds – 1 tsp
White Peppercorns – 1 tsp
Thai Ginger (Galangal) – 2 inches chopped
Fresh turmeric – ½ inch chopped
Lemongrass – 2 stalks chopped
Garlic – 8-10 cloves
Madras pyaaz (shallots) – 3-4 nos.
Green Chillies – 8-10 nos.
lime skin of 1 lemon
Fresh coriander roots & stems – 3-4 stalks (chopped)
Salt to taste



Thai curry & Required Vegetables:

Coconut milk 1 liter
Baby corn – 1/2 cup
Mushroom – 1/2 cup
Broccoli – 1/2 cup
Carrots – 1/2 cup
Capsicum – 1/3rd cup
Red Bell Pepper – 1/3rd cup
Brown sugar/regular sugar – 1.5 – 2 tbsp
Salt to taste
lime leaves 2-3 nos
Thai basil a small handful
Red chili – 1-2 (sliced) (Not Dry Red Chilli)


How to Make Vegetable Thai Green Curry (Cooking Method)

How to Make Green Thai curry Paste 

Roast the coriander seeds and cumin seeds lightly in a pan. Now put it in a mixer, add the rest of the ingredients like White Peppercorns, Thai Ginger, Fresh turmeric, Lemongrass, Garlic, Madras pyaaz (shallots), Green Chillies, lime skin, Fresh coriander roots & stems, Salt to taste, and mix well. Grind it.

How to Make Vegetable Thai Green Curry

Step – 1 Now take a pan, put 200 ml coconut milk in it and cook it till it becomes thick. After that add Thai green curry paste and cook it well.



Step – 2 Now add the remaining coconut milk and mix it well and cook for a while. After that add baby corn, broccoli, carrot, and capsicum and cook it well. (You can put the vegetables by boiling them separately in pre-heated water.)

Step – 3 Now add brown sugar and salt as per taste. When all the vegetables are cooked well, then put Thai basil, lemon leaves, and red chilies sliced on top.

Now your Veg Thai Green Curry is ready, you can serve it with rice.
