Kaju Katli (Cashew Barfi) is a traditional and popular Indian dessert, which is made during Diwali and big festivals. It is very easy to make at home. Only three ingredients are needed to make it – cashew, sugar and cardamom powder.
Ingredients:-
Cashew – 1 cup
Sugar – 1/2 cup
Cardamom powder – 1/4 teaspoon
Water – 1/4 cup
Ghee – for smoothness
How to Make Kaju Katli at Home (Cooking Method)
Step – 1 Pour cashews into a mixer grinder jar and grind them to a fine powder. Keep in mind that do not grind the cashew nuts too much, otherwise the powder will be smooth.
Step – 2 Take a pan and add sugar and water and boil it on medium heat. Keep stirring it with a spoon. Allow the mixture to boil after the sugar dissolves. Let the mixture cook until it becomes slightly thick and sticky.
Step – 3 Now reduce the heat and add cashew powder and cardamom powder. Mix it well. Stir continuously with a spoon until the mixture starts to form like a big bundle. It will take about 5-7 minutes.
Step – 4 Now turn off the heat and leave it to cool for 3-4 minutes.
Step – 5 Take a plate and grease it with ghee.
Step – 6 Put the cashew nut on the smooth surface. Grease the cylinder with ghee. Then roll the mixture like a chapati. Roll out into 1/3 inch thick round shape. Butter paper can also be placed over the mixture for easy rolling.
Step – 7 Cut it into squares using a knife.
Now your cashew katli is ready. You can serve it.
