Ingredients:-
Basmati Rice – 3/4 cup
Green Cardamoms – 3
Big Cardamom – 1
Cloves – 2
Cinnamon – 1 small piece
Bay Leaf – 1
Potato – 1 small chopped
Cauliflower – 1/2 cup chopped
Carrots – 1/4 cup chopped
French Beans – 1/4 cup chopped
Green Peas – 1/4 cup (fresh or frozen)
Onion – 1 medium sliced lengthwise
Green Chilies – 1-2 cut lengthwise
Ginger-Garlic paste – 1 tsp
Black Pepper – 4-5
Cumin – 1/2 tsp
Red Chili Powder – 1/2 tsp
Turmeric Powder – 1/8 tsp
Cumin-Coriander Powder – 1 tsp
Garam Masala Powder – 1/4 tsp
curd – 1/2 cup
Coriander Leaves – 2 tbsp finely chopped
Oil
salt to taste
fried onions – 1/4 cup
1 tbsp ghee
Saffron – 8-10 soaked in 1 tbsp warm milk
mint leaves – 8-10 chopped
How to Make Restaurant Style Vegetable Biryani (Cooking Method)
Step 1 – First of all, heat the water in a handi.
Step 2 – After that wash the rice thoroughly. You can soak rice in water.
Step 3 – When the water starts boiling, then put the rice in the water. And after adding it, stir it well.
Step 4 – After that add salt as required. After that add green cardamom, cloves, cinnamon, bay leaves. And wait till the rice is cooked.
Step 5 – When the rice is cooked then filter it with Rice Stainer.
Step 6 – Heat oil in a pan on medium heat. When the oil becomes hot, add cumin seeds, after that add chopped onion, green chilies and fry them till the onions become light brown in color. Now add ginger-garlic paste and cook for a while After that put all the masala powder and fry it.
Step 7 – Now add chopped potatoes, chopped cauliflower, and chopped carrots. Fry them for a while. Then add chopped French beans, peas, and salt. Mix well and cover the vegetables and let them cook. Keep stirring occasionally with a ladle.
Step 8 – When the vegetable is cooked, then add gram masala powder to it. After that add curd and cook for a while. After that turn off the flame.
Step 9 – Take a handi, make a layer of rice. After that put cooked vegetables with a little curry, spread all around. Spread a bit of biryani masala powder and coriander leave and mint leaves on top.
Step 10 – Again make a layer of rice over it and again put cooked vegetables with curry, spread all around. Then spread the biryani masala powder and coriander mint leaves.
Step 11 – Then make a thin layer of rice from the top and decorate it with fried onion, soaked saffron, and coriander mint leaves. after that Cover handi.
Step 12 – After that put the handi on medium flame and heat it for a while till the vapor starts coming. Or you can heat the handi till it is slightly warm, take care that the biryani is not burnt.
Now your veg biryani is ready, you can serve it with plain curd or raita.
