Friends Cashew Curry is a very popular dish. In this, roasted cashews are cooked in creamy and spicy gravy made of tomatoes, onions, and spices. so let’s know.


Ingredients:-

Cashew Nut – 1 cup
Onion – 1 Large chopped
Tomato – 2 chopped
Cinnamon of piece – 1 inch
Garlic Cloves – 1-2 chopped
Ginger – 1/2 inch, chopped
Green chili – 1 chopped
Red Chili Powder – 1/2 tsp
Cumin-Coriander Powder – 1 teaspoon
Turmeric powder – A pinch
Milk – 1/2 cup
Water – 1/2 cup
Kasuri Methi – 1/2 tsp  ( Dried fenugreek leaves )
Coriander Leaves – 2 tbsp finely chopped
Oil – 2 tbsp
Salt to taste

How to Make Kaju Curry (Cooking method)

Step – 1 Heat oil in a pan and add cashew nuts to it. Now fry on medium flame till it turns light brown in color, stirring continuously with a spoon to avoid burning. When fried, take it out on a plate.


Step – 2 Again heat the oil in the same pan on medium heat. Add a piece of cinnamon, chopped onion, garlic, ginger, and green chili. Fry the onion till it turns light pink in color. After frying, turn off the gas and keep it on a plate to cool down for a while.

Step – 3 Now put about 6-8 roasted cashew nuts in the mixer jar. And grind them till they become a fine powder. After grinding, put the chopped tomatoes in the same jar. And make a puree. Take out the cashew-tomato puree in a bowl.

Step – 4 Add roasted onions to the same mixer jar. Make a smooth paste by grinding it. In the same pan add oil onion paste. Fry till oil starts leaving from it. Add cashew-tomato puree, red chili powder, cumin-coriander powder, turmeric powder, and a pinch of salt to it.

Step – 5 Mix well and fry till oil starts leaving. Now add roasted cashew nuts, mix it well and cook for a minute, add milk and water to it. Mix well and cover and cook for 3 minutes.


Step – 6 Now remove the lid and let it cook till it thickens. Garnish with kasoori methi and green coriander. Now switch off the gas and the delicious cashew curry is ready. Serve it hot.
